Injera, a staple food in Ethiopia

Remember this the next time you head to the grocery store to pick up a loaf of bread!  Injera, a staple food in Ethiopia, is a sour fermented flatbread with a slightly spongy texture. It’s traditionally made out of teff flour. Injera is made fresh daily as it is eaten at most every meal in Ethiopia.  It even serves as silverware!
